Flawless Shells

Shells are the most difficult part in making macarons. Learn how & why of making the perfect shells using the Swiss meringue method.

Stable Buttercream

This course focuses on the anglaise buttercream – extremely versatile and delicious. Learn how to make a stable buttercream that can withstand the heat of your hands.

Understanding "maturing"

Maturing the macarons is an essential step in achieving the perfect texture – not hard, not too soft but just perfectly chewy.

Different nozzle/deco techniques

You will learn different deco techniques using different nozzles in this course.

Which meringue method is used?

In this course, all the shells are made using the Swiss meringue method. We have tested all three types of meringue methods and came to the conclusion that Swiss meringue works best for our students.

Which buttercream do you use?

We will teach you to master the anglaise buttercream. Anglaise buttercream is not only delicious but it is particularly effective in controlling the overall sweetness level.

Standmixer

This course utilises the standmixer (as well as the handmixer) which is an essential equipment for business owners.

Hanbit comes from a non-pastry background. He worked in banking, consulting and IT. This meant that in order to become a pastry chef, he learnt everything from scratch. This journey helped him design his courses such that it’s accessible to home-bakers as well as professionals.

complete guide for macaroons.

Very details and informative course starting from how to prep ingredients till storage. A lot to technique provided. If follow step by step carefully there is no way of failure. As he explained everything clearly and make it so easy to follow both the shell and fillings. Honestly been baking macaroons for ages, and now this is my new to go recipe.

Really detailed and helpful

The course is really detailed - Hanbit really explains everything. As a Korean-American I've seen a lot of these fatcarons around K-town and really needed to master it at some point and this is probably the best course that I can ever get hands on.
