Really sorry about the late reply – the system failed to give automated notifications on this.
Regarding the mousse cake, the ring itself is 5cm high but don’t worry too much about the size of the ring if you can’t get the same one. As long as you can make each fo the components correctly, then you can play around with the amount that you are putting inside the mousse ring. So don’t worry too much about it.
Regarding the gelatin powder: yes, the same weight of gelatin powder as the sheet gelatin. (by weight)
