Hi Carissa,
The cracking is due to several reasons – mainly because of the oven. If you are using a convection oven(with fan) it’s far more likely for the top to crack as hot air is continously circulated which dries out the surface of the cheesecake very quickly. With deck ovens you will experience less of this crack. Another reason might be because you’ve incorporated excess air into the batter.
