Very easy fix – bake for a shorter time. So what’s happened here is that the cake has been fully baked (not that it’s wrong in any way). People tend to slightly underbake Basque cheesecake to get a smooth silky looking interior. Now the downside of this would be that you might not get a burnt top as you are shortening the baking time – so it’s always a fight between whether you want a burnt top vs. smooth inside. This is especially an issue when you are baking smaller sized cheesecakes as they inherently require shorter baking time. So to get round this problem, you can either bake a larger size or you can use a deck oven with higher temperature for the top heating element which will help in burning the top of the cheesecake.
