Hi Chef I hope you’re doing well!
Chef, i’m really into experimenting with basque burnt cheesecake, but I’ve noticed that the size, particularly the height, tends to vary at times. It’s strange because even when I follow the same recipe, the cheesecake can turn out to be 1 cm taller on certain occasions. I’ve even tried adjusting the measurements to make it taller, but it didn’t seem to make a difference compared to using fewer measurements ☹ Any idea why this happens, Chef? And do you have any tips to consistently achieve a taller cheesecake?
