Hello,
Yes, you can pasteurise the eggs yourself – in Italy people simply use raw eggs in tiramisu and it’s more common to use raw eggs. It’s different between countries and cultures so if you’re not comfortable with raw eggs then do go for pasteurising the eggs yourself. There are lots of information on google and we have found a good website: it’s basically making a egg yolk syrup. Thank you.
