CURRICULUM

Season 1

Strawberry

Right, scones with strawberry jam – how classic. But if you think about it, they’re always served separately! Has anyone thought of combining them together? Well, here you go – carving out the centre and filling it with strawberry jam.

Fig

Paring figs with scones is real trendy. There’s so much flavour from the figs that works perfectly well with scones. And just like the strawberry scone, you will carve out the centre and fill them with fig jam.

Cheese

Let’s go savoury with scones. Doesn’t always have to be sweet. Savoury scones are surprisingly delicious and trust me they are much more delicious then you would imagine.

CURRICULUM

Season 2

Glazed Scone

This one is so eye-catching. It’s taken the theme from the Italian sfogliatine glassate – in Korean we call this “Nuneddine”. Furthermore, this is a type of “layered” scone which means the scone contains layers.

Real chocolate

Adding chocolate theme to scones may sound weird but it is really good. Topping it with coffee cream makes it heavenly.

Earl Grey Caramel

Definitely Hanbit’s favourite – earl grey pairs really well with caramel. You will also learn how to make home-made caramel.

What's special about this course?

14yrs of scones

Hanbit has lived in the UK for 14yrs and thus he has a pretty good idea of what scones should taste like. He has taken this and adapted it to the Korean market.

New ideas

Sfogliatine glassate applied to scones? Coffee cream on scones? Strawberry jam inserted inside the scones? Fig jam inserted inside the scones? Cheese with scones? Neverending ideas…

K-style scones

Scones in Korea have evolved into a completely new type of product – almost to the point that it doesn’t resemble the original scones! You will be able to learn trendy K-style scones in this course.

Understand the needs

Hanbit comes from a non-pastry background. He worked in banking, consulting and IT. This meant that in order to become a pastry chef, he learnt everything from scratch. This journey helped him design his courses such that it’s accessible to home-bakers as well as professionals.

Why & How

Hanbit’s genuinely interested in the science of baking. Thus, he tries to take the time to explain about the role of specific ingredients and how the methods work. In turn this helps his students to reduce the chances of failure.

Experience in teaching

Hanbit has been teaching students at his academy (Sugar Lane) for the past 4 yrs. Having taught more than 2000 students He has seen enough to know where students make mistakes and experience difficulties.

Hanbit Cho
